Authentic Japanese Cooking: Ginger Beef Steak

(1) Ginger Beef Steak

Ingredients (Serves 2)
2 filet mignon steaks
140 g onion
4 spears green asparagus
Salt and pepper

50 ml mirin
2 tbsp soy sauce
1 tbsp oyster sauce
15 g grated ginger

Directions
1. Cut the onion. Boil the asparagus with salt.
2. Season the beef with salt and pepper. Sear in a pan. Wrap the steak in aluminum foil and let it rest.
3. Make sauce in the same pan as used to cook the beef. Add mirin, soy sauce, oyster sauce and ginger and mix.
4. Slice the beef and plate with vegetables.

(2) Uzaku — Eel and Cucumber

Ingredients (Serves 2)
1 skewer kabayaki (cooked eel)
1 cucumber
2 myoga

Salt
100 ml dashi
100 ml rice vinegar
1 1/2 tbsp sugar
50 ml soy sauce

Directions
1. Cut the cucumber and soak in salted water for a while. Slice the myoga.
2. Cut the kabayaki into bite-size pieces and fry them in a pan.
3. Make the marinade sauce. Mix salt, dashi, vinegar, sugar and soy sauce.
4. Mix everything, plate and it's done.
