Cook Around Japan - Aichi: Mirin Odyssey

Mirin is a fundamental element of Japanese cuisine. We meet the oldest mirin brewer in Aichi Prefecture, and take you on a journey through the world of mirin, from traditional production methods to dishes. Featured recipe: Yellowtail Teriyaki.

Yellowtail Teriyaki

Ingredients (Serves 2)
2 fillets of yellowtail
A pinch of salt
Flour
Vegetable oil

(Seasonings)
4 tbsp mirin
2 tbsp sake
2 tbsp soy sauce

Directions
1. Sprinkle the fish with a pinch of salt, then dredge with flour.
2. Preheat the frying pan over high heat. Once the pan is heated, coat it with vegetable oil to fry the fish.
3. Place the fish skin side down. After browning both sides, remove from the pan. Then wipe the pan.
4. Add the seasonings and put the fish back in the pan. Bring the sauce to a boil to burn off the alcohol of the sake.
5. Spoon the sauce over the fish while it soaks up the flavor and gains a shine.
