Rika's Fusion Curry and Rice Meals

(1) Rika's Seafood Curry

Ingredients (Serves 2 to 3)
12 shrimp
8 scallops
1 onion
1 tomato

(Spices)
1 clove garlic
1 piece ginger
1 tbsp powdered Sansho pepper
1 tsp Doubanjiang

1 tbsp olive oil
100 g curry roux
600 ml water
Cooked rice, as desired

Directions
1. Cook the rice.
2. Rub salt into the shrimp and scallops. Blanch them. Then put in cold water and drain.
3. Mince the onion, slice the garlic and ginger. Sauté the onion with olive oil. Add the spices.
4. Add tomato and water in the pan and simmer. Add the curry roux and dissolve.
5. Add the seafood, simmer for 2 to 3 minutes. Serve with rice.

(2) Spinach and Burdock Curry

Ingredients (Serves 2 to 3)
1/2 gobo burdock root
1/4 bunch spinach
100 ml water
100 ml milk
A dash of olive oil

(Spices)
1 tsp powdered Sansho pepper
1/2 tsp Doubanjiang
A pinch of chili pepper

(Seasonings)
2 tsp granulated dashi
1 tsp soy sauce
1/2 tsp salt
1 tsp sugar

Cooked rice, as desired

Directions
1. Blanch and shock burdock root and spinach. Purée with water.
2. Stir-fry spices with olive oil until the aroma comes out and add the puréed vegetables and milk.
3. Season with dashi, soy sauce, salt and sugar. Simmer them over low heat for about 7 minutes.
4. Serve with rice. Sprinkle with chili pepper, to taste.
