(1) Rolled Pork Roast with Shiso

Ingredients (Serves 4)
600 g pork loin (block)
Shiso leaves
1 tsp salt
1 tbsp soy sauce
1 tbsp sugar
Karashi (Japanese mustard)

For the sauce:
4 tbsp sugar
4 tbsp mirin
4 tbsp soy sauce
4 tbsp sake

Directions
1. Slice open the block, to form a 1.5cm thick strip.
2. Sprinkle with salt, mix the soy sauce and sugar together, and spread over the meat along with the karashi.
3. Cover with shiso leaves and roll up tightly. Secure with kitchen twine.
4. Slow roast in a low temperature oven.
5. Remove the twine, cover with aluminum foil to cook through with residual heat until the center is a pale pink.
6. Slice, plate and drizzle with the sauce of reduced sake, sugar, mirin and soy sauce for a tender and juicy rolled roast fragrant with spices.

(2) String Bean Salad

Ingredients (Serves 2)
20 green beans
2 hard-boiled eggs
A pinch of salt
1 tbsp sushi vinegar
1 tbsp sesame oil
1 tbsp soy sauce
1 tbsp chopped anchovies

Directions
1. Cut the beans diagonally, blanch, shock in ice water and coat with anchovy dressing.
2. Stack to add height and dimension.
3. Sprinkle with chopped egg whites and yolks pressed through a sieve for a salad.
