Inside-out Sushi Rolls

Ingredients (Serves 4)
*2 cups / 400ml rice
*1/2 cup / 100ml vinegar
*2 tbsp sugar
*1 tsp salt
*200g medium fatty tuna
*1 avocado
*12 shiso leaves
*4 sheets roasted nori seaweed (1/2 size)
*toasted sesame seeds
*mayonnaise

1 Make the sushi vinegar. Put the rice vinegar into a bowl, add the sugar, salt and mix well until they are dissolved.

2 Pour the sushi vinegar over the rice and mix them well by cutting and folding action while fanning.

3 Cover it with a wet cloth and cool the rice.

4 Remove the stem from the shiso leaves and cut it in half lengthwise.

5 Peel the avocado and cut it 1cm rectangles.

6 Cut the tuna 1cm pieces.

7 Cut the nori sheets in half.

8 Place a piece of parchment paper about the same size as the nori sheet on a sushi mat. Place the nori sheet on it. Spread the sushi rice evenly on top of the nori, and then turn it over.

9 Place the tuna and shiso leaves a little off center of the nori and spread some mayonnaise on top. Then place the avocado and roll it over until the fillings are enclosed, and tuck in tightly.

10 Remove the parchment paper. Hold the rice and finish rolling.

11 Coat it evenly with sesame seeds.

12 Cut each roll into pieces and serve.
