Teriyaki Tsukune Meatballs

Ingredients (Serves 4)
*300g ground beef and pork
*1/2 celery stalk (100g)
*1/2 onion (100g)
*1 tbsp sake
*2 tbsp plain flour
*salt and pepper

[ingredients for Teriyaki sauce]
*1/2 cup / 100ml soy sauce
*1/2 cup / 100ml mirin sweet cooking sake
*4 tbsp sugar

1 Combine the soy sauce, mirin and sugar in a small pan and bring it to a boil.

2 Turn the heat down to low when the sugar is dissolved. Simmer it for about 15 minutes until it becomes thickened. Skim the surface if necessary.

3 Chop the onion finely.

4 String the celery and chop as the same size as the onion.

5 Mix the minced meat, sake, salt, pepper and flour in a bowl. Knead it until it becomes sticky.

6 Add the celery and onion, and mix.

7 Shape it into small round piece and toss each ball between your hands to let the air out of the patty.

8 Heat the pan over high heat, and pour a little oil.

9 Turn the heat down to medium. Cook the patties for 4-5 minutes until both sides gets brown.

10 After it's cooked, pour over the teriyaki sauce and serve.
