Egg Drop Soup

Ingredients (Serves 4)
*4 cups / 800ml dashi stock
*1 tbsp light soy sauce
*1 tbsp mirin (sweet cooking sake)
*1/2 tsp salt
*2 tsp water
*1 tsp potato starch
*3 eggs
*mitsuba trefoil

1 Heat the dashi stock, and add the soy sauce, mirin, and salt.

2 As soon as it comes to a boil, add the potato starch dissolved in water.

3 Add the beaten egg little by little to the soup.

4 Garnish with trefoil leaves.
