Japanese Leek Pancakes

Ingredients (Serves 4)
*1 1/2 large Japanese leeks
*4 ham slices
*salt
*pepper
*sesame oil

[ ingredients for dough ]
*1 cup / 200ml hard flour
*1 cup / 200ml plain flour
*3/4 cup/ 150ml water

1 Shift the hard and plain flours into the bowl, and add the water a bit at a time.
Knead the dough until it becomes as soft as your earlobe.
Put and cover it with plastic wrap in the bowl, and let it stand for about 10 minutes.

2 In the meantime, chop up the Japanese leek and ham very finely.

3 Divide the dough in half, and spread it out dusting it lightly with flour and roll it out into 40cm by 25cm square.
Spread a little sesame oil over the surface, put on the ham and leek, and leave an edge of about 5 centimeters all around,
and finally sprinkle on some salt and pepper.
Roll the dough up into a tube, and then roll the tube into a spiral.
Tuck the ends back into folds. Dust the dough again and flatten it with a rolling pin.

4 Heat some vegetable oil in a frying-pan, put in the dough, and brown it on both sides. Then add water and put on the lid.
When the water has evaporated, add a little sesame oil. Keep cooking until the dough becomes crispy.

5 Cut it into bite-size pieces.

6 Serve with a sauce made of soy sauce, vinegar, and chili oil.
