Tomato Hot and Sour Soup

Ingredients (Serves 4)
*2 tomatoes
*3 dried shiitake mushrooms
*2 eggs
*soup (made with 1 tbsp of granulated chicken stock dissolved in 4 cups / 800ml of hot water)
*1 tbsp shokoshu Chinese sake
*2 tbsp light soy sauce
*5 tbsp vinegar
*1 tbsp potato starch and 1 tbsp water
*rayu chili oil
*sesame oil
*coriander leaves

1 Soak the dried shiitake mushrooms in water for 30 minutes. Squeeze lightly, cut off the hard tip, and cut them into thin strips.

2 Remove the stalk from the tomatoes and cut them into 8 equal pieces.

3 Heat the soup in a pot and add the shiitake mushrooms and the tomatoes. When the tomatoes become tender, squash them lightly with the bottom of the ladle. When the ingredients are cooked, season with shokoshu, light soy sauce and vinegar.

4 Add the potato starch dissolved in water to thicken the soup. Pour the beaten egg into the pot. Add the rayu and sesame oil.

5 Serve the soup into a bowl, and garnish with coriander leaves.
