Crab Meat and Chinese Vermicelli Salad

Ingredients (Serves 4)
*150g crabmeat
*50g Chinese vermicelli (dried)
*2 cucumbers
*4 tbsp rice vinegar
*2 tbsp nam pla
*2 tbsp lime juice
*1 tsp sugar
*1 tbsp sesame oil
*coriander leaves
*salt

1 Combine the vinegar, nam pla, sugar, and lime juice in a bowl to make the dressing.

2 Cut the cucumber into 2-3mm thick pieces, sprinkle on some salt, and when it has softened, squeeze it in a cloth to remove excess moisture.

3 Pull apart the Chinese vermicelli, boil it for one minute until it becomes tender.

4 Drain, and put it in a bowl.

5 Cover it with plastic wrap, and let it steam.

This will ensure that it'll absorb the right amount of vinegar.

6 Cut it into bite-size pieces when it gets cool.

7 Remove the crabmeat from the shell, discard the cartilage, and break up the meat roughly using your fingers.

8 Put all the ingredients in a bowl, add the dressing and sesame oil, and mix together.

9 Add coriander, and mix again.
