Quick Pickled Cucumber
- Ingredients (Serves 4)
- *550-600g cucumber
*2 tsp salt
*1 knob ginger
*2 tbsp soy sauce
*6 tbsp rice vinegar
*3-4 tbsp sugar
1 Mix the soy sauce, rice vinegar,
sugar and sesame oil.
2 Cut the ginger into juliennes.
3 Cut the cucumbers in half. Rub them with salt and roll them on a cutting board.
Wash away the salt.
4 Cut them in half vertically and remove the seeds with a spoon.
Hit them with a rolling pin and cut them by hand into bite-size pieces.
5 Put the cucumbers, ginger and seasoning mixture in a plastic bag. Refrigerate for two to three hours.
