Salmon and Prawn Tsukune
- Ingredients (Serves 4)
- *360g salmon
*120g shelled prawns
*1 tbsp sake
*salt & pepper
*100ml mirin sweet cooking sake
*100ml soy sauce
*4 tbsp lemon juice
*5cm-square piece kombu kelp
1 Put the mirin in a pan and bring it to a boil. Turn down the heat. Simmer for a couple of minutes.
2 Pour the mirin into a bowl. Add the soy sauce, lemon juice and kombu kelp. Place in the refrigerator to cool.
3 Chop and mince the salmon and prawns.
4 Cut the onion into 7 or 8mm pieces.
5 Put these ingredients in a bowl and mix. Add the sake, salt and pepper.
6 Shape the mixture 5cm balls. Pan fry them till brown.
7 Garnish the tsukune with ginger. Pour on the ponzu.
