Rice with Salmon and Cod Roe
- Ingredients (Serves 4)
- *1 filet salmon , lightly salted
*1 sac of cod roe
*1 1/2 tbsp sake
*2 cups / 400ml rice
*2 cups / 400ml water
*1/2 tsp salt
1 Remove the bones from the salmon, and cut the fish into three equal pieces.
2 Cut the cod roe in half.
3 Pour the sake over the salmon and cod roe to remove the smell.
4 Wash 2 cups of rice and let it drain for 15 minutes. Then put it in a pan.
Put the sake in a measuring cup, and add water to 400ml. And add some salt.
5 Pour this mixture over the rice, and lay on the salmon and cod roe.
Put on the lid and cook over a high heat for 3 minutes.
6 Take off the lid, turn the heat down to low, put the lid back on again and cook for 12 more minutes.
Then turn up the heat for 1 minute to scorch the bottom of the rice.
7 Turn off the heat, let it steam with the lid on for 10 minutes. The salmon skin can now be removed.
8 Lightly mix the salmon and cod roe. Serve in a bowl, and garnish with some yakinori seaweed.
