Fried Eggplant with Garlic
- Ingredients (Serves 4)
- *460g eggplants
*200g thinly sliced pork
*2 knob garlic
*2 tbsp soy sauce
1 Cut the eggplants first in half lengthways, cut them into diagonal pieces.
2 Soak them in water to remove excess pungency.
3 Deep-fry in hot oil.
4 Fry the garlic slices in a frying-pan.
When they begin to release their aroma, add the pork and eggplants, and fry the ingredients.
Season with soy sauce and red pepper.
