Noodles with Shrimp and Vegetables
- Ingredients (Serves 4)
- * 2 portions cooked Chinese noodles
* 150g shrimp
* 1 pack bean sprouts
* 2 Japanese leeks
* shokoshu(Chinese sake)
* salt & pepper
* 2 tbsp garlic and ginger soy sauce
* 1 tbsp oyster sauce
* sesame oil
* coriander leaves
1 Loosen the noodles.
2 Rinse the shrimp in cold water and devein them. Season them with the salt, pepper and Chinese rice wine.
3 Combine the garlic and ginger soy sauce, oyster sauce and sesame oil in a bowl to use as a sauce later.
4 Remove the roots from the bean sprouts. Chop the leeks into 5cm julienne.
5 Heat the oil in a frying pan and stir-fry the shrimp. Remove them from the pan once they are cooked.
6 Add a little more oil to the pan and stir-fry the bean sprouts and leek quickly on high heat. Remove them from the pan.
7 Add a little more oil to the pan, Loosen and stir-fry the noodle.
8 Turn off the heat and put the shrimp, bean sprout and leek back to the pan.
9 Add the sauce you made earlier and toss them together. Season to taste with salt and pepper.
10 Serve with the coriander leaves.
