Sauted Marlin with Grain Mustard Sauce

Ingredients (Serves 4)
Sauted marlin
*4 marlin fillets
*1/2 tbsp soy sauce
*1/2 tbsp sake
*Flour
*2 tbsp vegetable oil

Sauted onion
*2 onions
*2 tbsp butter
*Salt to taste
*Pepper to taste

Grain mustard sauce
*1/4 cup mirin
*1/4 cup dashi stock
*3 tbsp soy sauce
*1/2 tbsp sugar
*1 tbsp butter
*1 tbsp grain mustard

1 Peel the onion and cut it into 1cm half-moon shaped pieces. Sauté the onion in butter. Season with salt and pepper.

2 Wipe the marlin dry if it is wet. Marinate it in soy sauce and sake for about 10 minutes.

3 Coat the marlin in flour. Heat the little oil in the frying pan. Brown both sides of the marlin until it is cooked throughout.

4 -- Preparing the Grain Mustard Sauce --
Turn the heat on medium and add mirin to the pan. Simmer the mirin for a short time. This helps the alcohol evaporate. Add the dashi, soy sauce, sugar and mix.
Turn off the heat. Add the butter and grain mustard and mix.

5 Place the sauted onion on a plate. Put the marlin on top of the onion. Pour the grain mustard sauce over top.
