Boiled Bamboo Shoot, Ham and Leek with Milk
- Ingredients (Serves 4)
- * 1 boiled bamboo shoot(root part)
* 1 Japanese leek
* 3 slices ham
* 1 knob ginger
* Soup stock (2 tbsp granulated chicken stock + 1 cup /200ml hot water)
* 1 cup / 200ml milk
* 1/2 cup /100ml fresh cream
* 1 1/2 tbsp cornstarch dissolved in 1 1/2 tbsp water
* white pepper
1 Cut the bamboo shoot and Japanese leek into 5-6cm thin strips. Cut the ham and ginger into thin strips.
2 Heat the oil in a deep frying pan. Add the bamboo shoot, ginger, Japanese leek and ham in this order to the frying pan and fry quickly.
3 Add the soup stock, milk and fresh cream. Season with the salt and white pepper. When it comes to a boil, thicken it with the starch and water mixture.
