- Ingredients (Serves 4)
- *450g bonito (skinless sashimi-style)
*1large knob ginger
*1/2 cup /100ml sake
*1/3 cup/80ml mirin
*3 tbsp soy sauce
*1 tbsp sugar
*Sansho, Japanese pepper leaves - to taste
1 Slice the ginger. Cut the bonito into 2cm square pieces.
Put the soy sauce to the pan. Turn the heat on medium.
Add the sugar and sake.
When it comes to a boil, add the bonito and ginger.
2 Put the drop lid on and stew until the liquid is gone.
Turn off the heat and let it stand. This allows the bonito to absorb the flavour.
3 Serve it on a plate and garnish with Sansho leaves.
