Daikon Salad with Scallops (Japanese Radish Salad with Scallops)
- Ingredients (Serves 4)
- *600g Daikon, Japanese radish
*1small tin of boiled scallops
*10 Shiso leaves
1/4-1/3 cup / 50-66ml mayonnaise
granulated chicken stock
1 Peel the daikon and shred it finely into 5-6 cm pieces.
2 Put it in a bowl and add a little salt. Mix it. Let it stand for 5-10 minutes. Squeeze the water out of the daikon.
3 Drain the scallops in a strainer and tear them in small pieces. Add them to the daikon and mix.
4 Add chicken powder consommé, mayonnaise, salt, pepper and whtie pepper and mix.
5 Cut the shiso leaves in half. And slice them and add them to the salad and mix. It's very important to add the shiso leaves after seasoning. If you put the shiso leaves with mayonnaise from the beginning, the color doesn't look nice or the taste isn't good.
