Japanese-Style Hot and Sour Soup

Ingredients (Serves 4)
*1 boiled small bamboo shoot
*2 dried shiitake mushrooms
*1/2 block silken tofu
*2 eggs
*5 cups/1000ml dashi
*2 tbsp sake
*4 tbsp soy sauce
*4 tbsp vinegar
*1 tbsp potato starch
*1 tbsp water
*2 chopped red chili pepper

1 Cut the bamboo shoot into fine strips.

2 Soak the dried shiitake mushrooms in little water.
Cover the mushrooms with plastic wrap and let them absorb the water for minutes to an hour.
Cut the tofu into 1cm square pieces.

3 Put the dashi stock and shiitake soaking water in a pot and bring to a boil.

4 Add the bamboo shoot and shiitake mushrooms, soy sauce, sake, vinegar and chopped red chili peppers.

5 Add the tofu and when it boils again, add the potato starch dissolved in water.

6 Beat the eggs and pour into the soup. Turn off the heat.
