Jabara Cucumber Pickled with Sweetened Vinegar

Ingredients (Serves 4)
*6 cucumbers
*1 tsp salt
*50g ginger
*1 red pepper (sliced)

sweetened vinegar
*1 cup /200ml mirin
*3 tbsp sugar
*2 tsp salt
*1 cup /200ml vinegar

1 Put the mirin in a small pan and turn the heat on.
When it comes to a boil, turn the heat down to low and boil it down for about three minutes.

Turn the heat off. Add the sugar and salt to dissolve it while it is hot.
Add the vinegar when cool and mix.

2 Cut off both ends of the cucumber and peel it a little.
Sprinkle salt on them, and roll them on a cutting board.
Rinse them with water.
Make fine cuts on the cucumber,diagonally.
Turn it over. Do the same thing for the other side.

3 Peel the ginger and cut it into fine strips.

4 Put the 1 cup of sweetened vinegar in a small plastic bag and add the cucumber, ginger and red pepper. Let it stand in the refrigerator for 3-4 hours.
