Japanese Pumpkin with Sesami
- Ingredients (Serves 4 to 6)
- *700g Japanese pumpkin
*1-1 1/2 cups water
*4-5 tbsp sugar
*2 tbsp mirin sweet cooking sake
*1 1/2 tbsp soy sauce
*ground white sesame seeds
1 Cut the pumpkin into four pieces.
2 Scoop out the seeds.
3 Further cut each quarter by first slicing through the hard outer shell.
4 Cut the pieces into cubes 2 to 3cm in size.
5 Pour the water, soy sauce, sugar and mirin into a pan and mix well.
6 Add the pumpkin, bring the liquid to a boil and simmer.
7 Cook until almost all the broth has evaporated and the pumpkin becomes soft.
8 Sprinkle with ground sesame and mix lightly.
