Mini Pancakes of Crab and Egg
- Ingredients (Serves 4)
- *150g crabmeat
*2 small bamboo shoots (100g)
*50g mange-tout peas
*1-2 tsp sugar
for "An" sauce
*1 cup/ 200ml dashi stock
*2 tsp sugar
*1+1/2 tbsp light soy sauce
*1+1/2 tbsp mirin sweet cooking sake
*2 tsp potato starch
*2 tsp water
*1-2 tsp grated ginger
1 Remove the cartilage from the crabmeat.
2 Season the crabmeat with sake, salt and pepper.
3 Slice the bamboo shoots and cut it into fine strips.
4 Remove the strings of the snow peas and cut it diagonally.
5 Beat the eggs. And season it with salt and pepper.
6 Put a little oil in a frying pan and heat it on medium. Pour a ladleful of the egg liquid mixture and cook it.
Fry the bamboo shoot, snow peas and crabmeat in this order
"An" sauce preparation
1 Put the dashi, sugar, light soy sauce, "mirin" and salt in a small pan.
2 When it comes to a boil, add the potato starch dissolved in water to thicken the mixture.
7 Pour the "An" sauce over the 'pancakes'.
