Red and Green Peppers Stuffed with Meat
- Ingredients (Serves 4)
- *1/3 - 1/2 onion
*4 small red peppers
*4 green peppers
*400g ground pork and beef
*1/2 tsp salt
*a pinch of pepper
*2 cups / 400 ml dashi stock
*1/4 cup / 50 ml soy sauce
*3 tbsp mirin sweet cooking sake
*2 tbsp sugar
*1 chopped red chili pepper
*1 tbsp potato starch
*1 tbsp water
1 Chop the onion finely, and cut the peppers in half lengthways, and remove the stem and seeds.
2 Put the ground meat, onion, egg, salt and pepper in a bowl, and mix them well till the mixture gets sticky.
3 Sprinkle a little flour inside the peppers, and stuff them with the meat.
4 The meat side down. When the surface gets brown, turn them over.
5 Put the dashi stock, soy sauce, sugar, and mirin in a pan, and bring to a boil.
6 Add the stuffed peppers, the red chili pepper, and cook them for 7 to 8 minutes over a low flame.
7 Thicken the sauce with potato starch dissolved in water.
