Simmered Hijiki Seaweed and Soybeans

Ingredients (Serves 4)
*50g hijiki seaweed (dried)
*200g boiled soybeans
*1 small carrot (100g)
*100g strings beans
*Salt
*2 cups/400ml dashi stock
*4 tbsp sauce
*3 tbsp sugar
*1/4 cup / 50 ml mirin sweet cooking sake

1 Soak the hijiki in water for 10 to 12 minutes, and cut it into smaller pieces.

2 Peel the carrot, and cut it into juliennes.

3 String the string beans, boil them in water with salt for two minutes, cool them under running water, pat them good and dry, and slice them diagonally.

4 Combine the dashi stock, soy sauce, sugar and mirin in a deep frying-pan.

5 When the seasoning mixture comes to a boil, add the carrot, hijiki, and soy beans.
Cover the ingredients with a drop-lid, and simmer until the liquid has evaporated.
Turn off the heat and let it sit.

6 Add the string beans, mix well and serve.
