Pickled Celery and Carrot with Tosa Vinegar
- Ingredients (Serves 4)
- *2 stalks celery
*1 cup vinegar
*4 tbsp sugar
*2 tbsp light soy sauce
*1/2 cup dashi stock
* grated ginger
1 First, mix the vinegar, sugar and light-colored soy sauce. Add the dashi in the bowl and mix all of them well.
2 Cut the carrot into juliennes of 6 cm.
3 String the celery, and cut it into juliennes of 6 cm.
4 Add the carrot and celery into the mixture, and leave it untouched for 15 minutes.
5 Pour the sauce over the vegetable. Garnish it with grated ginger.
