Tofu with Salmon Tartare

Ingredients (Serves 4)
* 150g salmon marinade
* 1 block silken tofu
* 1 avocado
* 10 green perilla leaves
* Parmesan cheese
* 1-2 tbsp mayonnaise
* salt, pepper

< salmon marinade >
* 600g salmon (skinned for sashimi)
* celery leaf
* thyme
* basil
* bay leaf
* sliced onion
* 5-6 crushed pepper corns
* 1 cup/200ml water
* 20g salt
* 2 tbsp vegetable oil

< sauce >
* 1/2 cup / 100ml soy sauce
* 2 tbsp sugar
* 2 tbsp mirin sweet cooking sake
* 1/2 tbsp grated ginger

< How to make salmon marinade >
1 Combine the salt and water in a pan and bring it to a boil. Turn off the heat and let it cool.

2 Add the salmon to plastic bag. Let it soak for 2-3 hours.

3 Take the salmon out of the water and put in a vat. Add the basil, onion, celery leaf, thyme, bay leaf and pepper and pour the vegetable oil over top. Cover the salmon with plastic wrap and keep it in the refrigerator for another 2-3 hours.

1 Combine the soy sauce, sugar, mirin and simmer it for about 10 mins to make the sauce.

2 Drain the tofu and place it on a serving plate. Place kitchen paper around the tofu to get rid of any excess water. Store it in the refrigerator until later.

3 Cut the avocado in half and remove the pit. Peel the skin and chop the avocado roughly.

4 Chop the marinated salmon coarsely. Then mince it.

6 Combine the salmon and avocado in a bowl. Season with mayonnaise, salt and pepper.

7 Put the salmon tartar on tofu and sprinkle the green perilla and parmesan cheese on top. Pour the sauce over top.

8 Finelly, combine the grated ginger in the sauce.
