Salmon Marinade on Sushi Rice

Ingredients (Serves 4)
* 300g salmon marinade
* 2 cups/ 400ml sushi rice
* 2 cucumber
* 2 tbsp white sesame seeds
* nori seaweed
* wasabi
* soy sauce
* sudachi

< salmon marinade >
* 600g salmon (skinned for sashimi)
* celery leaf
* thyme
* basil
* bay leaf
* sliced onion
* 5-6 crushed pepper corns
* 1 cup/200ml water
* 20g salt
* 2 tbsp vegetable oil

< How to make salmon marinade >
1 Combine the salt and water in a pan and bring it to a boil. Turn off the heat and let it cool.

2 Add the salmon to plastic bag. Let it soak for 2-3 hours.

3 Take the salmon out of the water and put in a vat. Add the basil, onion, celery leaf, thyme, bay leaf and pepper and pour the vegetable oil over top. Cover the salmon with plastic wrap and keep it in the refrigerator for another 2-3 hours.

1 Remove the seeds from the cucumber and cut it into small square pieces.

2 Add the sudachi, cucumber pieces and white sesame to the sushi rice and mix.

3 Serve the sushi rice in a bowl and crumple the nori to put on top.

4 Slice the salmon marinade.

5 Put the salmon marinade on the rice. Pour the wasabi soy sauce over top.
