Sliced Asparagus Salad

Ingredients (Serves 4)
*10 fresh green asparagus
* "Chirimenjako" small dried sardines
*Roasted peanuts
*4-5 tbsp mayonnaise
*Grated "Wasabi" horseradish
*Light soy sauce

1 Remove the tough bottom of the asparagus and remove the scales. Peel the hard skin.

2 Cut the stalk of asparagus into half.

3 Parboil and retain some firmness. Cool under running cold water. Remove the excess water completely.

4 Further cut the pieces of asparagus into half, and julienne.

5 Toss the asparagus in a bowl with mayonnaise, light soy sauce and grated "Wasabi" horseradish.

6 Coarsely crush the peanuts and roast the "Chirimenjako".

7 Garnish the salad with the peanuts and "Chirimenjako".
