Steamed Rice with Chicken and Vegetables
- Ingredients (Serves 4)
- * 1 boneless chicken thighs
* 100g boiled shelled shrimps
* 6 shiitake mushrooms
* 1cup green peas (frozen acceptable)
* 1/2 carrot
* 3 cups / 600ml glutinous rice
* 3/4 cup / 150ml water
* 2 tsp granulated chicken stock
* 1 tsp light soy sauce
1 Wash the glutinous rice and soak it in water for about 20 minutes.
Combine the water, chicken stock and soy sauce to make a soup.
2 Cut the chicken into 1cm square pieces. Cut the prawns into the same size.
Remove the stems of the shiitake mushrooms and cut them into 1 cm
square pieces. Peel the carrot and cut it lengthwise into 6, and then slice them crosswise.
3 Heat a little oil in the frying pan. Fry the chicken.
When the color of the chicken changes, add the carrot, shiitake mushroom and prawns in this order. Sprinkle salt and pepper. (Add a little more oil if necessary)
4 Drain the rice and add to the pan with the soup.
Mix this well.?Fry for about 2 or 3 minutes until the rice absorbs the soup.
5 Place a kitchen cloth on a steaming basket.
Add the fried rice, put the lid on and steam on high for 20 minutes.
