"Inari-Zushi" Fried Tofu Pouches Stuffed with Vinegared Rice

Ingredients (Serves 4)
*2 cups/ 400ml rice
*1 knob ginger (minced)
*2-3 tbsp roasted white sesame seeds

Sushi Vinegar
*1/2 cup (100ml) vinegar
*2-2+1/2 tbsp sugar
*1 tsp salt

*12 "Abura-age" deep-fried tofu
for flavor (first time)
*2 cups/ 400ml "Dashi" stock

*4 tbsp "Zarame" coarse sugar
*3 tbsp sugar
*3 tbsp "Mirin" sweet cooking sake
*4 tbsp soy sauce
for flavor (second time)
*2 cups/ 400ml "Dashi" stock
*2 tbsp "Zarame" coarse sugar
*2 tbsp sugar
*2 tbsp "Mirin" sweet cooking sake
*3-4 tbsp soy sauce

1 Wash the rice well. Cook it with a little less water for a firmer texture.

Sushi vinegar preparation
2 Heat the vinegar in a small pan. Warm slowly over low heat, then turn it off. Dissolve sugar and salt in the liquid, and let it cool.

3 Put the cooked rice in a "Handai" wooden sushi tub or wide cooking bowl. Pour the sushi vinegar on top and mix well, while fanning if possible. Then let the rice cool while placing a wet towel on top. Add the sesame seeds and minced ginger, and mix.

4 Cut the "Abura-age" in half and open them to create little pouches. If they don't open easily, roll a chopstick over them, like a rolling pin.

5 Boil plenty of water in a pan, and immerse the "Abura-age" to remove the excess oil. Drain the "Abura-age" in a strainer and let it cool to room temperature. Then squeeze to get rid of excess moisture.

6 Bring the "Dashi" to a boil and dissolve sugar, "Zarame" coarse sugar, soy sauce and "Mirin". "Zarame" will give the liquid a rich flavor.

7 Add the fried tofu and turn the heat to low. Place a drop lid, and cook for 10 minutes. Flip the tofu occasionally. When turning the tofu, be careful not to tear them.

8 Then give a flavor for second time. Add the "Dashi", sugar, "Zarame", soy sauce and "Mirin". Simmer for 20-30 minutes, and keep turning the tofu until there is only a little liquid left in the pan.

9 Let the tofu cool at room temperature, while flipping the tofu occasionally.

10 Stuff the flavored "Abura-age" with the sushi rice.
