- Ingredients (Serves 4)
- *6 potatoes (400g/ 14oz)
*2 Japanese leeks
*2 - 3 anchovy fillets
*150-200g/ 5-7oz pizza cheese
*1 cup fresh cream (200ml)
*salt (to taste)
*pepper (to taste)
1 Preheat the oven to 200°C/ 390°F.
2 Peel the potatoes and slice them into 5 mm slices. Soak them in water and drain them.
3 Place a few pieces of kitchen paper on a microwave plate. Put the potatoes on it evenly. The potatoes will get soggy if you don't use kitchen paper.
4 Cover with plastic wrap loosely. Microwave for 5-6 minutes or until soft. Take the plastic wrap and kitchen paper off the plate.
5 Tear the anchovies into pieces and slice the Japanese leeks into 4 to 5cm pieces.
6 Mix the anchovies and the Japanese leeks with the potatoes.
7 Pour the fresh cream (with salt and pepper) over the potato mixture evenly. Sprinkle cheese on top. Bake it in the oven for about 40 minutes.
