Rare Beef Sushi

Ingredients (Serves 4)
Rice vinegar dressing
*1 cup(200ml) rice vinegar
*2 tsp salt
*5 tbsp sugar

Sushi rice
*2 cups(400ml) rice
*1+3/4 cups(380ml) water
*1/2-1 cup(100-200ml) rice vinegar dressing
* "Wasabi" horse radish
*Minced ginger
*2 tbsp toasted white sesame seeds

*Rare beef (previously prepared)

1 Rice vinegar dressing preparation
Pour the rice vinegar into a small pan and heat on medium. Bring the rice vinegar almost to a boil. Turn off the heat and add the sugar and salt and dissolve well. Let it cool.

2 Sushi rice preparation
Cook the rice with a little less water than usual.

Pour the rice vinegar dressing over the rice evenly and cut and fold the rice. Add the minced ginger and toasted white sesame seeds to the sushi rice and mix well.

3 Cut the plastic wrap in a small size and put the rice with the spoon. Make a small rice ball. Put a little bit of "Wasabi" on top of the rice ball. Slice the rare beef thinly and place on top of the rice ball. Dip the soy sauce to your taste.
