Green Beans with Sesame Dressing

Ingredients (Serves 4)
*200 g green beans
*salt
- for the sesame dressing -
*50 g toasted sesame seeds
*2 tbsp sugar
*1/2 tbsp mirin sweet cooking sake
*1/2-1 tbsp soy sauce
*salt

1 String the beans.

2 Add salt to boiling water, and blanch green beans for about two minutes.

3 Soak the beans in cold water for one to two minutes to make them crispy.

4 Dry them with a paper towel, and cut them diagonally.

5 Now for the sesame dressing.
Grind the toasted sesame seeds in a suribachi for 20 to 30 minutes until they turn to a paste.
A food processor will save you time.

6 Add sugar, mirin, and soy sauce to the sesame paste, and mix until creamy.
Add a little salt if needed.

7 Add the green beans, and coat them with sesame dressing.
