Steamed Rice with Pork and Vegetables
- Ingredients (Serves 4)
- *2 cups/ 400ml rice
*2 cups/ 400ml "Dashi" stock
*1 tbsp soy sauce
*1 tbsp sake
*1/3 tsp salt
*2-3 fresh shiitake mushrooms
*1 cup/ 200ml boiled soybeans
*150g/ 5oz pork
Marinade sauce for pork
*2 tbsp soy sauce
*1/2 tbsp sugar
*Juice from 1 tsp grated ginger
1 Wash the rice and soak in water for about 10-15 minutes.
2 Chop the pork roughly and marinade in soy sauce, sugar and juice from grated ginger.
3 Peel the carrot and cut into small "Icho-giri" quarter-round slices.
4 Cut the stems of the shiitake mushrooms, and cut into 2 centimeter squares.
5 Drain the rice well.
6 Put the rice in a pan and add the carrot slices, shiitake mushrooms, soy beans and marinated pork on top.
7 Pour the soy sauce and sake in a measuring cup. Add the "Dashi" stock to the cup until it measures 400ml. Season with salt.

8 Add the seasoned "Dashi" to the pan, pouring gently at the brim of the pan.
9 Put the lid on and turn the heat on high. After it comes to a boil, turn the heat down low, and cook for about 15-20 minutes.
10 When the rice is cooked, turn off the heat and let it stand for about 10 minutes. Stir the rice well.
