Red Cabbage and Mushroom Salad

Ingredients (Serves 4)
*200g/ 7oz red cabbage
*6-8 mushrooms
*4 fresh "Shiitake" mushrooms
*100g/ 4oz string beans
*2 tsp minced garlic
*3-4 tbsp olive oil

*3 tbsp wine vinegar
*1/2 tbsp soy sauce
*Consommé powder
*Salt&pepper
*Cottage cheese -- to taste

1 Shred the cabbage and soak in water. Then drain well.

2 Remove the strings of the string beans and boil. Cut diagonally. Cut off and discard the roots of the "Shiitake" mushrooms and cut into quarters.

3 Cut the mushrooms into quarters.

4 Heat olive oil on high in a frying pan. Add the minced garlic and fry until it gives off the flavor. Add the mushrooms and stir-fry. Season with salt and pepper. Don't overcook, so that they don't lose their chewy texture.

5 Put the cabbage in a big bowl. Add string beans and the cooked mushrooms while they are still hot. Add soy sauce, wine vinegar, consommé powder, and combine. Season with salt and pepper.

6 Serve the salad in a bowl or dish and garnish with the cottage cheese.
