Fried Chicken Thighs with Leek Sauce

Ingredients (Serves 4)
*2 chicken thighs
*1/2 tbsp soy sauce
*1 tbsp shokoshu (Chinese sake)
*Potato starch

*Leek Sauce
1/2 Japanese leek
1/2 tbsp vegetable oil
1 roughly chopped red pepper
1/2 cup soy sauce
1 tbsp shokoshu (Chinese sake)
2 tbsp vinegar
1 1/2 tbsp sugar

1 It's important to cook the chicken at room temperature. Pierce the chicken skin with a fork and marinate it in the soy sauce and shokoshu.

2 Marinate it for a while and let the flavors absorb well. Cover the thighs completely with potato starch.

3 Fry the chicken on medium-heat in vegetable oil. Turn them constantly to ensure they are cooked throughout.

4 How to make the leek sauce.
Pierce the Japanese leek with a knife and mince it. If you pierce it first, it is easier to mince. Heat the oil in a frying pan. Sauté the Japanese leek and red peppers. Don't sauté them too long. Stir constantly and add the seasoning. Turn off the heat.

5 Drain and cut the chicken into easy-to-eat size pieces just before eating.

6 Place them on a serving plate and pour the leek sauce over top.
