"Gyudon" Beef on Rice
- Ingredients (Serves 4)
- *500g / 18oz thinly sliced beef
*800g / 28oz onions
*2 cups / 400ml white wine
*1 cup / 200ml water
*3/4 cup / 150ml soy sauce
*3/4 cup / 150ml mirin
*4 tbsp sugar
*Pickled red ginger to taste
1 Slice the onions into 1cm half-moon shaped slices.
2 Cut the beef into 5cm lengths.
3 Heat the water and white wine on medium heat. When this comes to a boil, add the beef. Skim the surface of the broth. Turn to low heat. Simmer it for 10 minutes. If the beef is still hard, simmer them a little longer.
4 Add the soy sauce, mirin and sugar and cover it with a drop lid. Simmer for 10 minutes.
5 Add the onions and simmer until the onions are transparent and soft.
6 Serve this on top of hot cooked rice. Garnish with a little pickled red ginger.
