Easy Pickled Cucumber

Ingredients (Serves 4)
*5 cucumbers
*2 tsp salt
*1 knob ginger
*2 tbsp soy sauce
*1/2 cup vinegar
*1 tbsp sugar
*1 tsp granulated chicken stock
*Sesame oil to taste

1 Mix the soy sauce, vinegar, sugar and granulated chicken stock and sesame oil.

2 Trim the ends of the cucumber. Roll the cucumber in salt and wash it. Wipe the cucumber dry. Smash the cucumber with a rolling pin to make cracks in it. Cut it into easy-to-eat size pieces.

3 Slice the ginger finely.

4 Put the cucumber and ginger into a plastic bag and add the liquid mixture prepared at the beginning.

5 Put the bag in the refrigerator for at least 2-3 hours.
