Sauteed Japanese Leeks and Shiitake Mushrooms

Ingredients (Serves 4)
*3 Japanese leeks
*8 shiitake mushrooms
*1-2 tbsp vegetable oil
*2 tbsp soy sauce
*2 tbsp sake

1 Cut the Japanese leeks into 5-6cm pieces. Then cut them in half lengthwise.

2 Remove the stem of the shiitake mushrooms. Slice diagonally into 2-3cm pieces.

3 Heat the oil in the frying pan. Add the shiitake mushrooms and leeks and brown them. When the leeks get soft, pour the sake and soy sauce over them. It tastes delicious if you sprinkle shichimi (seven-spice chili pepper) on top.
