"Nuta" with Tuna and Japanese Green Onion

Ingredients (Serves 4)
100g/ 4oz tuna (medium fatty raw flesh for sashimi use)
1 bunch Japanese green onion

Sauce
3 tbsp red miso
2 tbsp sugar
1 tbsp mirin
1-2 tsp vinegar
Japanese mustard
1 knob ginger, shredded

1 Cut the ends of the Japanese green onions, then cut them in half. Cut the tuna into 2cm square pieces. Boil the onions in boiling water for a few minutes, then pour cold water over them to cool them. Remove the slime from the middle of the onion with a knife. Cut the onions into 3-4cm pieces and squeeze them well to remove the excess water. Keep the tuna and onion cool in the refrigerator until mixing with the mixture.

2 Put the red miso, mirin, sugar, vinegar and Japanese mustard into a bowl and mix them. Add the green onions and then add the tuna. Mix them just before eating.

3 Place on a serving plate and garnish with shredded ginger.
