Watercress with Sanbaizu Dressing

Ingredients (Serves 4)
*3 stalks watercress
*1/4 cup vinegar
*2 tbsp light soy sauce
*1/4 cup mirin sweet cooking sake
*2 tsp sugar
* bonito flakes

How to make Sanbaizu Dressing
- Put the vinegar, soy sauce and mirin in a bowl.
Keep it cool in the refrigerator until later.

1 Cut the watercress into 3-4 cm long pieces. Divide into the stem and leaf.

2 Boil the water in advance. Put the watercress in it. Boil the stem parts first and then add the leaves.

3 Place the watercress in a strainer, and soak it in cool water. Then drain it well.

4 Add the watercress to the sanbaizu and mix.

5 Pour the sanbaizu dressing over the watercress, and garnish with bonito flakes.
