- *1kg/ 2.2lb pork shoulder chop
*1 green stem of leek
*1 knob ginger
*1/2 cup (100ml) soy sauce
*1/4 cup (50ml) sake
*1 tbsp sugar
*1-1.5l water (or enough water to cover the meat in a pot)
1 Turn the heat on medium and heat a little vegetable oil in a frying pan. Brown the meat on all side.
2 Transfer the meat to a stewpot. Add soy sauce, sake, sugar and water to the pot until it covers the meat. Add the green stem of leek and crushed ginger.
3 Bring to a boil over high heat. Turn the heat low and place a drop-lid. Skim the surface and turn over the meat occasionally. Simmer for about 1 hour until the broth thickens.
