Egg and Crab 'pancakes'

Ingredients (Serves 4)
*150g/ 5oz crabmeat
(Seasoning for crabmeat)
*1/2 tbsp sake

*2 small bamboo shoots (100g/ 4oz)
*50g/ 2oz snow peas
*6 eggs (large)
*1-2 tsp sugar
*1/2 tbsp sake
*Vegetable oil

for "An" sauce
*1 cup/ 200ml "Dashi" stock
*2 tsp sugar
*1+1/2 tbsp light soy sauce
*1+1/2 tbsp "Mirin" sweet cooking sake
*2 tsp potato starch
*2 tsp water
*1-2 tsp grated ginger

1 Remove as much cartilage as possible, using a fork or bamboo skewer, while flaking the crabmeat. Season with sake, salt and pepper.

2 Slice the bamboo shoots and shred.

3 Remove the strings of the snow peas and shred diagonally.

4 Sautée the bamboo shoot, snow peas and crabmeat in this order and season with salt and pepper. Turn off the heat and set aside until cooled.

5 Crack the eggs in a bowl. Add the sautéed ingredients and season with sugar, sake, salt and pepper.

6 Put a little vegetable oil in a frying pan and heat on medium. Pour a ladleful of the egg liquid and cook both sides. Don't brown.

"An" sauce preparation
7 Put the "Dashi", sugar, light soy sauce, "Mirin" and salt in a small pan and let the mixture come to a boil. Add the potato starch liquid to thicken. Turn off the heat and then add grated ginger.

8 Pour the "An" sauce over the 'pancakes'.
