Vinegar-Flavored Sushi Rice

Ingredients (Serves 4)
* 2 cups (400ml) white, short-grained rice
* 1 3/4 cups (345ml) water
* 1/2 cups (100ml) rice vinegar dressing (see below)

Utensil:
Handai (Wooden sushi tub; a wide cooking bowl can be used as Handai)

Preparation:
1 Cook the rice with little less water than usual for chewy texture.

2 Put the hot rice into the Handai. Mix the vinegar dressing with the rice. Use a paper fan to cool the rice and to make it shiny.


How to prepare the rice vinegar dressing:
Ingredients: Rice vinegar 1 cup
Salt 1 1/2 tsp
Sugar 6 tbsp
Preparation: Pour the vinegar into a pan and turn on medium heat. Bring it almost to a boil. Remove from heat. Add the sugar and salt and dissolve completely. Let it cool.
