Spinach with Walnut Paste
- Ingredients (Serves 4)
- *1 bundle spinach (350g/ 12oz)
*60g/ 2oz walnuts
*2 tbsp sugar
*1 tbsp soy sauce
*1/2 tbsp "Mirin" sweet cooking sake
1 Cut off roots of spinach from about 3cm above. Cut the spinach into 3-4cm lengths and separate the leaves and stems. Add a pinch of salt to a pot of boiling water and boil the spinach, stems first.
2 Boil the spinach for a minute or two, and place under cold running water. Wring out extra water by squeezing a fistful at a time.
3 Roast the walnuts lightly and remove the skin with a toothpick or pointed end.
4 Grind rather finely roasted walnuts with a mortar and pestle. Add sugar, soy sauce and "Mirin" and mix together.
5 Pour drops soy sauce on spinach and give it another squeeze. Mix with walnuts paste.
