Shiraae (Spinach and Tofu Speciality)
- Ingredients (Serves 4)
- *1 silk tofu(soft tofu)
*1 bundle fresh spinach
*2 tbsp sugar
*2 tbsp sesame paste
*2 tsp light soy sauce
*2 tsp miso paste
*Salt to taste
1 Drain the tofu well. Wrap it in paper towel. Press the tofu to remove excess water.
2 Wash the spinach before cooking it.
3 Trim the stem of the spinach. Separate the thicker pieces of the spinach and set apart.
4 Cut the spinach in 3-4 cm length.
5 Boil the water. Just after the water comes to a boil, add the thicker pieces and then add the rest of the spinach.
6 Cook for 1 to 2 minutes or until the stems are barely tender.
7 Drain the spinach and immerse in cold water.
8 Squeeze the spinach to remove the water. Try to get as much water as possible out of the spinach.
9 Mix the sesame paste, sugar, light soy sauce and miso paste in a bowl.
10 Add the drained tofu and mix well. Add the spinach.
11 Add salt and extra seasoning to your taste.
You have to use fresh spinach, frozen spinach won't do!
