Tofu Chanpuru (Stir Fry Vegetable Tofu Mix)

Ingredients (Serves 4)
*2 cakes cotton tofu (firm tofu)
*150g/ 5.5oz sliced pork
*1 zucchini
*1 pack of bean sprouts
*2 tbsp vegetable oil
*2 tbsp instant dashi powder
*Salt (to taste)
*Pepper (to taste)

1 Drain the tofu and wrap it in paper towel. Place it on a strainer.

2 Cut the sliced pork into 3-4 centimeter pieces.

3 Cut the zucchini in round slices.

4 Add the bean sprouts. It is better if you remove the ends from the bean sprouts. They have a better taste and look nicer.

5 Cut the tofu into 6-9 pieces.

6 Heat the oil in a frying pan and add the vegetable oil.

7 Place the tofu pieces in the frying pan and season them with salt and pepper.

8 Fry the tofu slowly until they are golden brown.

9 Turn them over and season with salt and pepper again, browning all sides.

10 Remove the tofu from the pan.

11 Add a little oil and stir fry the pork --- frying it evenly.

12 Add the zucchini and fry.

13 Add the bean sprouts and stir fry for about 3 minutes. Keep the heat very high to ensure that the vegetables are crispy.

14 Add the fried tofu and season the mix with instant dashi powder, salt and pepper. You can add soy sauce if you like.
