Kuzu Tofu (Tofu with Vegetable and Soy Sauce Mix)
- Ingredients (Serves 4)
- *1 cake silk tofu (soft tofu)
*4 shiitake mushrooms
*2 Japanese leeks
*1/2 cup dashi (soup stock)
*3 tbsp soy sauce
*2 tsp sugar
*1 tbsp potato starch
*1 tbsp sake
1 Drain the tofu and wrap it in paper towel. Place it on a strainer.
2 Remove the stem from the shiitake mushrooms and slice them in 5 mm pieces.
3 Cut the Japanese leek into 4-5 centimeter rectangles.
4 Cut the tofu into 6 pieces.
5 Put half of the vegetables in the bottom of the bowl.
6 Add the tofu.
7 Add the remaining vegetables to the bowl.
8 Mix the dashi (soup stock), soy sauce and sugar together. Add the potato starch and mix well.
9 Pour the mixture over the tofu and vegetables.
10 Wrap it with plastic wrap loosely, so that the steam can escape and microwave on medium for 6 minutes.
11 Remove the bowl from the microwave and stir well. This will ensure that the liquid thickens.
