Flaked Mackerel with Vegetables
- Ingredients (Serves 4)
- *200g / 7 oz mackerel (2 fillets from 1 mackerel)
*50g / 2 oz carrot
*3-4 dried shiitake mushrooms
(Instead of dried shiitake mushrooms, fresh mushrooms can be used)
*1 piece ginger
*1-2 tbsp vegetable oil
*1 tbsp sake
*1 tbsp sugar
*2 tbsp mirin
*4 tbsp soy sauce
1 Soak the dried shiitake mushrooms in water for at least 30 minutes until they become soft.
2 Remove any visible bones from the mackerel fillets. Scoop the mackerel flesh from the skin from head to tail, with a spoon. Tap the flesh with the knife roughly.
3 Squeeze the mushrooms lightly. Remove the stems and chop.
4 Chop the ginger finely. Peel the carrot and onion and chop.
5 Heat the oil in a frying pan. Add the ginger and mackerel and brown slightly.
6 When the mackerel turns flaky, add the shiitake mushrooms, carrots and onions.
7 Add the sake, sugar, soy sauce and mirin. Keep stirring until there is a little juice left in the pan.
